Recipe: Healthy club sandwiches

Wouter and I love to eat these layered sandwiches, so we decided to make some healthy versions for a saturday afternoon post bootcamp lunch. They tasted really good, so I decided to post a little recipe here, on le blog! We made two versions and took an half of each.

Roast beef club sandwich

What you need: 

  • 3 slices of whole wheat spelt bread, toasted 
  • 4 thin slices of roast beef 
  •  1/2 avocado 
  • small handful of rocket 
  • 1 tomato, sliced 
  • 1 tbsp of (homemade) mayonnaise 
  • Black pepper 

What you do: 

  1. Start with the first slice of toasted bread and use a fork to cover the bread with the avocado.
  2. Cover the avocado with two slices of roast beef, sprinkle with a bit of grounded black pepper.
  3. Top it with some rocket before you put the second slice of toasted bread on top. 
  4. Cover this slice of bread with a little bit of (homemade) mayonnaise, on top of that 2 slices of roast beef, the tomato slices and more rocket. 
  5. Top it all of with the last slice of toasted bread and use two cocktail sticks to keep it all together. Slice the sandwich diagonally. 

Chicken bacon club sandwich 

What you need: 

  • 3 slices of whole wheat spelt bread, toasted 
  • 4 thin slices of chicken breast 
  • 2 slices of bacon, baked crispy 
  • 1/2 avocado 1 tomato, sliced 
  • cottage cheese 
  • small handful of rocket 
  • black pepper 

What you do: 

  1. Start with the first slice of toasted bread and cover it with a thin layer of cottage cheese, the sliced tomato, 2 thin slices of chicken breast and a bit of rocket. 
  2. Put the next slice of bread on top and cover it with another layer of cottage cheese, slices of avocado, the bacon, chicken breast and rocket. 
  3. Top it all of with the last slice of toasted bread and use two cocktail sticks to keep it all together. Slice the sandwich diagonally. 

Tip: Instead of potato chips, Wouter and I ate ours with banana chips. Super tasty!
