Recipe: Banana Pancakes

When we got back from our roadtrip through Italy we came home with our groceries (bananas!) and found out my mother in law bought us bananas too! So we kinda had a banana overload. We instantly thought about all the smoothies we could make, but I also thought about pancakes! Since I don't eat refined grains I tried this super easy and quick pancake mix. It's gluten free, flourless and full of protein!

What you need for two small pancakes:
• 1 mashed (ripe) banana
• 2 eggs
• Cinnamon
• Coconut oil

That's it! Off course you can add any topping you like. I've used more banana, nectarine slices (baked in the oven for a bit, with cinnamon), Greek Yogurt, coconut shavings, chia seeds and a drizzle of Agave syrup.

What you do:
Mash the banana with a fork, in another bowl whisk the eggs. Mix banana and eggs together and add some cinnamon to taste. Put the coconut oil in a pan and add the batter to the pan, make 2 small round pancakes of it. Let the batter set for a minute or until the edges turn a little brown, flip it and you're done! Now you can add your toppings. This is super yummie with berries too!
