Recipe: Coconut Berry Parfait

One of my favorite breakfasts to prep! It's really easy, super tasty and fast. Perfect for when you're on a busy schedule.

What you need for 1 serving:

  • 1/2 cup coconut milk
  • 4 tbsp oatmeal
  • 1 tbsp chia seeds
  • 1 tbsp coconut grater
  • 1 tbsp raspberries
  • 1/3 cup of mixed berries (from the freezer)
  • 2 tbsp Greek Yogurt
  • 1 tbsp home made granola

Instructions:


  1. Put the coconut milk in a glass jar. Add the oatmeal, chia seeds, coconut grater and raspberries and give it a good stir. Mash the raspberries a bit while you stir, so you'll get a pink mixture.
  2. Top this mixture with the mixed berries and put it in the fridge for 4 hours or overnight.
  3. Before serving, top it with the Greek yogurt and the granola.
You see, super easy and it looks really cute!

  1. Bedoel je kokosmelk uit blik, of kokos-rijstmelk van bijvoorbeeld Alpro?

    1. Ik had echt kokosmelk uit blik, als je kokos-rijstmelk gebruikt, moet je er wat meer havermout bij doen, zodat het wat dikker wordt!
