What you need:
- 180 grams spelt couscous
- 1 tbsp butter
- 1 garlic clove
- smoked chicken breast
- green paprika
- yellow paprika
- 8 cherry tomatoes
- 3 spring onions
- cubed feta cheese
- rocket
- roasted pine nuts
- fresh grounded sea salt and black pepper
- lemon juice
What you do:
- Cook the couscous as directed on the package, when it's done, stir in the butter and garlic. Let it cool down.
- Cut the paprikas, cherry tomatoes and spring onions into little pieces and mix it with the couscous. Also add the cubed feta cheese.
- Add the salt, black pepper and lemon juice to taste.
- Put as much as you like on a plate and top the mixture with rocket and pine nuts.
I usually add some fresh baked whole wheat slices of bread when I have this for dinner. When I take it with me to work for lunch I'll bring the rocket and pine nuts in a separate container, so it will stay fresh and crunchy!
