Recipe: Couscous salad

Hey there! Once in a while I like to make this couscous salad, because it's easy, delicious and healthy. And there are always left over, so you'll be able to eat it for lunch the next day.

What you need:
  • 180 grams spelt couscous
  • 1 tbsp butter
  • 1 garlic clove
  • smoked chicken breast
  • green paprika
  • yellow paprika
  • 8 cherry tomatoes
  • 3 spring onions
  • cubed feta cheese
  • rocket
  • roasted pine nuts
  • fresh grounded sea salt and black pepper
  • lemon juice

What you do:
  1. Cook the couscous as directed on the package, when it's done, stir in the butter and garlic. Let it cool down.
  2. Cut the paprikas, cherry tomatoes and spring onions into little pieces and mix it with the couscous. Also add the cubed feta cheese. 
  3. Add the salt, black pepper and lemon juice to taste.
  4. Put as much as you like on a plate and top the mixture with rocket and pine nuts.

I usually add some fresh baked whole wheat slices of bread when I have this for dinner. When I take it with me to work for lunch I'll bring the rocket and pine nuts in a separate container, so it will stay fresh and crunchy!
