Recipe: Green Monster Salad

What you need (for 2 servings):

  • 1 cup cooked lentils
  • 1 zucchini (cut in bite sized pieces)
  • 2 handfuls spinach
  • 1 bell pepper
  • 1 small onion
  • 1 big garlic clove
  • 1 avocado
  • 3 tbsp extra virgin olive oil
  • 1/4 cup water
  • sea salt, to taste
  • 2 tbsp fresh lemon juice
  • 40 gram basil leaves
  • 30 gram Parmesan cheese
  • 1/4 cup of almonds
  • 1/4 cup of mixed pine nuts, sunflower seeds and pumpkin seeds (roasted)
  • 1 large sweet potato
  • 1-2 Tbsp spice or spice combination of your choice: chipotle powder, smoked paprika, Chinese five-spice, pumpkin pie spice, garam masala, Cajun seasoning, etc.

What to do:

  • Preheat the oven to 200 degrees celcius, remove the skin from the sweet potatoe and cut it into fries. Drizzle it with olive oil and sprinkle it with seasoning you like. Spread them  out on a baking sheet and put in the oven for 30 minutes, make sure to turn the fries after 15 minutes!
  • Add the avocado, almonds, basil leaves, parmesan cheese, (peeled) garlic, salt, pepper into a food processor and process until smooth, stopping to scrape down the bowl when necessary. This will be the dressing.
  • When the fries have only 10 minutes left to bake, sauté the chopped onions. Add the zucchini and bell pepper for about 5-7 minutes, then add the spinach into the skillet and cook until wilted. Add the lentils so they warm up a little.
  • When the sweet potato fries are ready, the rest will be done too. Put the fries and sautéed veggies on a plate, put a generous amount of dressing onto the veggies and some roasted mix too.
