- Chicken breast
- Coconut shavings
- 2 egg whites
- Sesame seeds
- Dried chillipepper (powder)
- 1tbsp curry powder
- 1 tsp black pepper
- 2 tbsp coconut oil
What to do:
- Cut your chicken breast into bite sized 'fingers'.
- Mix the egg whites with the chillipepper, curry powder and black pepper
- Marinade the chicken breast fingers in the egg white mix and then dip them into the coconut shavings. This will be the crust. Sprinkle some sesame seeds on top.
- Heat the coconut oil and bake the chicken until brown and well cooked.
I added a fresh spinach salad with cherry tomatoes, bell pepper, some seeds and feta cheese. A hard boiled egg, sweet potato fries and a dip made of Greek Yogurt, chives, salt and pepper.
