Recipe: Coconut Chicken Fingers

What you need:

  • Chicken breast
  • Coconut shavings
  • 2 egg whites
  • Sesame seeds
  • Dried chillipepper (powder)
  • 1tbsp curry powder
  • 1 tsp black pepper
  • 2 tbsp coconut oil
What to do:
  • Cut your chicken breast into bite sized 'fingers'.
  • Mix the egg whites with the chillipepper, curry powder and black pepper
  • Marinade the chicken breast fingers in the egg white mix and then dip them into the coconut shavings. This will be the crust. Sprinkle some sesame seeds on top.
  • Heat the coconut oil and bake the chicken until brown and well cooked.

I added a fresh spinach salad with cherry tomatoes, bell pepper, some seeds and feta cheese. A hard boiled egg, sweet potato fries and a dip made of Greek Yogurt, chives, salt and pepper.
