Recipe: My tuna salad

This is one of my favorite salads, which we often eat for lunch. It's super easy, tasty and healthy too!
What you need:
  • Canned tuna in olive oil
  • a small onion
  • 3 half peppers (green, yellow and red, eat the rainbow!)
  • 1 tomato
  • feta cheese
  • roasted pine nuts
  • a boiled egg
  • Boil an egg (8 mins)
  • Roast the pine nuts and let them cool down
  • Chop the onion, peppers, tomato and feta cheese real tiny
  • Put the tuna in a bowl and add salt and pepper to taste
  • Add the chopped veggies and cheese and gift it a good stir, until everything is well combined
  • Put it on a plate and add the boiled egg
It's enough for 4 small lunches. I eat the left over peppers as a snack.


We like to take it to work with some left over pepper wrapped in chicken filet.
