Recipe: My Pasta Pomodoro

Hey there everybody, today I'd like to share a delicious pasta dish with you! It's pretty easy to make this dish 'clean'. So for all of the clean eaters, try this at home!  

What you need for 2 plates: 
  • Spelt pasta
  • 10 Sun dried tomatoes
  • 250 grams Cherry tomatoes
  • 2 hands Spinach leaves
  • Fresh thyme
  • Oregano
  • Sea salt
  • Black pepper
  • Pine nuts
  • 2 tbs olive oil
  • Parmesan cheese
  • Feta cheese
  • 1/2 garlic clove
Cook the spelt pasta like it's said on the package.

Slice the cherry tomatoes in half, lay them in a bowl and sprinkle them with olive oil, salt, pepper, oregano and top it of with parmesan cheese. Put it in a pre-heated oven untill the cheese is melted and the tomatoes soft.

Put the sun dried tomatoes, fresh thyme, olive oil, salt, pepper, oregan, pine nuts and garlic in a bowl and use an hand blender to make a puree.

When the pasta is done, pour out the water and add the puree to the pasta, mix it up really well, so the tomato paste is all over the place. Add a handfull of spinach leaves to a plate and put the pasta on top of it, next are the cherry tomatoes and some feta cheese.
