Recipe: Sun-blushed tomato spread

Hey there, let me share with you one of my favorite spreads! I often use this in my Pasta Pomedori recipe, or on a rice cracker, toast or lunch wraps. It's delicious and super simple to make!

What you need:

  • 1 cup of sun-blushed tomatoes in olive oil
  • 2 tbsp pine nuts
  • 1 garlic clove, chopped finely
  • 2 tbsp Parmesan cheese, finely grated
  • The leaves of 4 little branches of thyme
  • Black pepper


  1. Put all the ingredients in a bowl and use an immersion blender (hand blender) to blend it into a smooth mixture. 
  2. Check if you like the thickness of the spread. If you want it more fluid, just add a bit of extra vierge olive oil and blend again.
