What you need:
- 1 cup of sun-blushed tomatoes in olive oil
- 2 tbsp pine nuts
- 1 garlic clove, chopped finely
- 2 tbsp Parmesan cheese, finely grated
- The leaves of 4 little branches of thyme
- Black pepper
Directions:
- Put all the ingredients in a bowl and use an immersion blender (hand blender) to blend it into a smooth mixture.
- Check if you like the thickness of the spread. If you want it more fluid, just add a bit of extra vierge olive oil and blend again.
