Recipe: Grilled Chicken Salad



Last week I made a delicious grilled chicken salad, I want to share the recipe with you guys! I'm planning on sharing more (salad) recipes with all of you! Would you like that?

What you need for the chicken marinade:
• 2 Tbsp of Balsamic Vinegar
• 1 Tbsp of Extra Virgin Olive Oil
• 1/2 Tbsp of Piri Piri Oil (leave this out if you don't like spicy food!)
• 1 Tbsp of Lemon Juice
• 1 Tbsp of (dried) Rosemary
• 1 Tbsp of fresh chopped Parsley
• Salt and papper to taste
• 2 6oz Thinly sliced chicken breast

Now. In a large bowl combine the vinegar, olive oil, piri piri oil, lemon juice, garlic, rosemary, parsley and season with salt and pepper. Add the chicken and toss to coat. Let stand for about 15 minutes.


Preheat a non stick grill pan over medium high heat and spray lightly with olive oil.
Place the marinated chicken on the hot grill pan and cook for a few minutes on each side or until cooked thru. Remove to a plate and let it cool down.


Now make a salad of your choice, I had a mixed salad with baby spinach, rocket salad and regular green salad. I added some chopped tomatoes, goat cheese, a boiled egg (quartered) and some olives.
Chop the chicken in bite size pieces and add it to the dressed salad. Finish with a few drops of balsamic vinegar and a drizzle of extra virgin olive oil. I also like to add some sea salt.
