Recipe: Instant noodle cups

When I wasn't living as healthy as the last couple of years, I used to like a bowl of instant noodles for lunch. Just add some boiling water to a package and there you have it, a super easy (not so healthy) lunch. When I was prepping our salads I was thinking about it and decided to make up a healthier version. Home made instant noodles. And here's the recipe! Take it to work and just add some boiled water and enjoy!


What you need for the bouillon powder:
  • 1 tbsp salt
  • 2 tbsp onion powder
  • 1 tbsp garlic powder
  • 1 tbsp paprika powder
  • 1/2 tsp turmeric powder
  • 1 tbsp coconut palm sugar
What you need for 4 cups:
  • 4 heat safe jars 
  • 90 grams soba noodles
  • 3/4 cup shredded carrots
  • 2 cups spinach leaves, chopped
  • 1 cup cooked chicken
  • 2 tbsp miso paste
  • 2 tsp wasabi paste
  • 1/4 cup bouillon powder (above)
  • 3 spring onions, in small rings
  • 4 tbsp soy sauce
Directions:
  1. First make the bouillon powder. Place all the ingredients in a dry bowl and mix well.
  2. Cook the soba noodles according to the package until they begin to soften (about 2 minutes). Drain in a colander and rinse with cold water, to stop the cooking. Set aside.
  3. Assemble the instant cups. Set out the 4 jars that can accommodate about 20 fluid ounces (I've just Bonne Maman jam jars). In each jar layer the ingredients in the following order: Spinach, carrots, chicken, miso paste (1/2 tbsp per jar), wasabi paste (1/2 tsp per jar), soy sauce (1 tsp per jar), softened noodles and spring onions. Cover and store in the refrigerator until ready to serve.
  4. When you're hungry, just take a jar and fill it with boiling water, close the lid and wait 2 minutes. Open it, stir well and enjoy!
